I am happy to announce that we have partnered with Fromagerie Sophie to create a new cheese pairing experience for the tasting room! This new cheese flight will be unique in allowing guests to have more than one experience per wine. It gives one the opportunity to taste the different paths that wines & cheeses can travel together, which I find fascinating.
The journey to this new pairing offering was of course tough. Sophie and I had to sample many cheeses with the wine, while we sat in their beautiful vine-laced courtyard as clouds passed over head. It’s a job that someone has to do, right?
In between small talk, we pin point and separate flavors…
“Wild Blueberries, and a pop of Dark Cherry at the finish.”
“Oh, man…which one?”
After 5 cheeses, how do you choose what to pair with a wine? That can be the tough part of the pairing process as there are sometimes more than one positive flavor profile to choose from. The most important thing is to not pick something that will compete with the wine and vice versa. They should be harmonious. My favorite thing is being surprised. Sometimes the least expected pairing works beautifully. That is the cool thing about food & wine pairings is there is no single formula.
